Mr Trybuchowski's Polish Honey Cake "Piernik"

Ingredients

  • 1lb self-raising flour
  • 1/2 lb caster sugar
  • 1lb liquid honey
  • 4 large eggs
  • 1/2 cup sunflower oil
  • 1 teaspoon baking powder
  • 1/2 cup of mead ( if none available use water or juice)
  • 4 oz walnuts
  • 2 oz freshly grated orange & lemon peel
  • Handful of Raisins
  • Pinch of Salt
  • Honey-cake spices (from a continental delicatessen or use 3 teaspoons of mixed spice)

Method

Mix sugar, honey, egg yolks, add sieved flour, mead, oil, salt. Mix well.

Add spices, walnuts and well-beaten egg-white, mix again.

Pour into 3 oiled and bread-crumbed small bread tins.

Bake at about 325F/ 170C for 45 to 55 minutes.

Test to see if baked.

Leave in oven until cooled.

Kitchen should smell nice when ready!

Sealed in a plastic bag this will keep in cold conditions for at least 2 months.
