Honey Shortbread Fingers
Ingredients
- 1 tablespoonful of honey
- 125g-5oz butter
- 100g—4oz sugar
- 200g—8oz self raising flour
Method
Beat the butter, sugar and honey together in a bowl with an electric mixer until light and fluffy. Roll a teaspoonful of the mixture into a finger. Repeat and place the fingers on greased oven trays about 5cm apart, flatten slightly with a fork.
Bake in a slow oven at 160 degrees C, 300 degrees F, or gas mark 2 for about 20 minutes or until firm. Cool on a wire rack.
